Brownie Cookie Rings

Have you ever had a brownie that became a cookie? Or perhaps you have seen the two merge?
Well, if you haven't now's your chance to make one that will fulfill your desire for the taste of a brownie, but with the crunch of a cookie.
This cookie is popular in our family during the holidays because our boys love chocolate and it reminds them of a mini wreath. It's fun to look at and fun to eat.
The glaze is delicate and a great finishing touch. It gives the cookie an elegant decorative feature.
To make this cookie more 'child friendly', you could add green and red candy or chocolate drops.
This holiday cookie was created for my eight nieces and nephews and my three boys. It's easy for them to participate in making the icing and applying it. All I say is, “Just drizzle!”
Brownie Cookie Rings
Ingredients:- 1 cup butter
- 1 cup sugar
- 1/2 cup cocoa powder
- 2 teaspoons vanilla
- 2 1/2-3 cups flour
- 1 tablespoon cream
Directions:
Preheat oven to 350 degrees Fahrenheit.
Cream butter and sugar until smooth. Sift cocoa powder into the mixture. Add vanilla and stir well.
Add the flour and cream. Mix until a dough forms.
Roll out 1/8-inch thick.
Cut into rings using a large cup and then a small cup for the inside circle. Makes about 20 cookies.
For glaze:
- 2 cups icing sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla
Whisk the icing sugar, milk and vanilla into a bowl until smooth.
Drizzle on cooled cookies.
