Buried Cherry-Chocolate Cookies

One day, a friend gave me these delicious little cookies and I was hooked!
Since my hobby is inventing new recipes, I couldn't resist the temptation to create my own version, like adding cinnamon for a litte bit of spiciness.
Boy, i could finish the whole batch at one sitting!
Buried Cherry-Chocolate Cookies Recipe
Ingredients:
- 1 1/2 cups all-purpose flour
- 3 tablespoons unsweetened cocoa powder
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 egg yolk
- 24 maraschino cherries, patted dry
- 1/3 cup coarse granulated sugar
Frosting:
- 1 cup powdered sugar
- 1/4 cup vanilla extract
- 1 tablespoon milk
- 1 to 2 drops red food coloring
Directions:
In a medium bowl, combine flour, cocoa powder, cinnamon and salt.
In a large bowl, cream butter and sugar until fluffy. Beat in vanilla and egg yolk until combined. Gradually beat in flour mixture. Cover and chill for 1 hour.
Preheat oven to 350F degrees. Line cookie sheets with parchment paper.
Wrap about 1 tablespoon dough around each cherry; roll in sugar.
Place cookies 1-inch apart on prepared cookie sheets.
Bake for about 15 minutes or until set. Cool completely on wire racks.
For frosting: combine sugar and vanilla extract. Gradually add milk until spreadable consistency. Add food coloring; mix well.
Dip each cookie in frosting; place on wax paper until frosting is set.
