I'm so excited about your contest since I would love love love to own a KitchenAid mixer! Because I don't I tend to stick to easy-to-make cookies that need just a bowl and wooden spoon.

These easy Funfetti Christmas cookies are a great example. My kids love to help make them as much as they enjoy eating them and sharing them with their friends. There's something about Funfetti cake mixes that make kids of all ages smile.

I love the way the festive green frosting and sprinkles brighten up a cookie plate.

If you'e never tried making cookies with a cake mix, give it a whirl. They taste great and are super quick and easy, which can be important when the craziness of the holidays rolls around. All you need is a funfetti cake mix, frosting, oil and eggs so they're economical too.

Cookies don't have to be complicated to be delicious. Sometimes the best recipes are the easiest.

Recipe for Christmas Funfetti Cake Mix Cookies

Ingredients:

  • 1 pkg. Christmas/Holiday Funfetti® Cake Mix
  • 1/3 cup canola oil
  • 2 large eggs
  • 1/2 Funfetti® Green Christmas/Holiday Frosting with Sprinkles

Heat your oven to 375°F.

In large bowl, combine cake the dry cake mix, oil and eggs. Stir with spoon until the mixture is thoroughly moistened.

Shape the dough into 1-inch balls and place them about 2 inches apart on ungreased cookie sheets. With bottom of glass dipped in flour, flatten each cookie ball to 1/4-inch thickness.

Bake at 375°F for 6 to 8 minutes or until edges are light golden brown. Remove from the oven and cool 1 minute and then transfer the cookies from cookie sheets to wire racks to cool.

Repeat with remaining cookie dough, being sure to use fully cooled cookie sheets.

Spread the frosting over warm cookies. Immediately sprinkle each with candy bits included with the can of frosting. Let frosting set before storing. Store in tightly covered container.

Makes: about 36 cookies
