Granola Apple Nut Cookies

This was my favorite cookie growing up and I would always help my mom bake them. Oh, the memories. The recipe includes a glaze to be drizzled on top, but feel free to leave some plain too. Either way, this is a delicious and hearty cookie filled with the goodness of granola, apples and walnuts - hard for anyone to resist!
Granola Apple Nut Cookies Recipe
Ingredients:- 1 1/2 cups firmly packed brown sugar
- 1/2 cup butter, softened
- 1/4 cup milk
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon peel
- 1 egg
- 1 1/2 cups all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon (may substitute with nutmeg)
- 1/4 teaspoon salt
- 1 1/2 cups finely chopped apples
- 1 cup granola
- 1 cup chopped walnuts
- 3/4 cup confectioners' sugar
- 2 to 3 teaspoons lemon juice
Directions:
Preheat oven to 375F degrees. Set aside ungreased cookie sheets, or sheets lined with parchment paper for easier cleanup.
In a large mixing bowl with an electric mixer on medium-low speed, beat brown sugar and butter until fluffy. Add milk, 1 tablespoon lemon juice, lemon peel and egg and continue beating until well mixed.
Gradually add flours, baking soda, cinnamon and salt and beat until combined.
Using a large wooden spoon, stir in apples, granola and nuts.
Drop dough by heaping teaspoons at least 2 inches apart onto cookie sheets.
Bake for 9 to 13 minutes or until golden.
Remove from oven and transfer cookies to wire racks and cool completely.
Meanwhile, prepare the glaze:
In a small mixing bowl, stir together the confectioners' sugar and gradually add lemon juice until desired drizzling consistency is achieved. Drizzle glaze over cooled cookies.
Note: High altitude adjustment. If above 3,500 feet, use only 1 cup firmly packed brown sugar.

These cookies are best stored in an airtight container between sheets of waxed paper.
