Granola Gingerman Boys

When my adult son was very little, he named these cookies, "Gingerman Boys" and we have been calling them that ever since.
I have changed the recipe little by little over the years and it continues to be our favorite Christmas cookie!
Granola Gingerman Boys Recipe
Ingredients:- 1/2 cup shortening
- 1/2 cup sugar
- 1/2 cup light molasses
- 1 1/2 teaspoons vinegar
- 1 egg, beaten
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 1/4 cups granola cereal
- seedless raisins, if desired
Combine shortening, sugar, molasses and vinegar in a medium saucepan. Bring to a boil, stirring occasionally. Remove from heat and let cool.
Stir in egg. Add in the flour, baking soda, salt and spices. Stir in granola.
Refrigerate dough for one hour.
Turn onto lightly floured board. Roll 1/4-inch thick. Cut with floured cookie cutters.
Place on cookie sheets. Decorate with raisins.
Bake at 350F degrees for 10 minutes, or until set.
Cool for 2 minutes on pan then remove to wire racks.
Makes about 40 small or 20 large cookies.
