Maple Walnut Oatmeal Cookies

Maple Walnut Oatmeal Cookies Recipe
- 1 1/2 cups old-fashioned oatmeal
- 3/4 cup desiccated (unsweetened) coconut
- 1 1/3 cups all purpose flour
- 1/2 teaspoon coarse salt
- 2/3 cup packed light-brown sugar
- 8 tablespoons (1 stick) plus 1 tablespoon unsalted butter
- 3 tablespoons pure maple syrup
- 2 tablespoons golden syrup
- 1 teaspoon baking soda
- 2 tablespoons boiling water
- 1 teaspoon pure maple extract
- 1 cup (2 3/4 ounces) walnuts, coarsely chopped
- Position one of your oven racks in the middle of your oven and preheat oven to 300F degrees. Line your cookie sheets with parchment paper and set aside.
- In a medium bowl, combine oatmeal, coconut, flour, salt and brown sugar. Set aside.
- In a small saucepan over medium heat, combine butter, maple syrup and golden syrup.
- Heat until butter is melted. Remove from heat and set aside.
- In a small bowl, combine the baking soda with boiling water. Immediately stir this mixture into the melted butter until combined. Add the maple extract. Stir into the oat mixture.
- Fold in walnuts.
- Form cookie dough into balls (about 3 tablespoons each) and place about 3 inches apart onto prepared cookie sheets.
- Flatten each of the balls slightly with the back of your hand or bottom of a glass.
- Bake cookies until golden brown and set, about 20 minutes.
- Transfer cookies to wire rack to cool completely.
- Can be stored at room temperature for up to one week in air tight container.
