Pepita Christmas Crisps

I make these slice and bake cookies every year because they look perfect on a Christmas cookie tray because of the flecks of red and green!
I also make them because they are easy and delicious too!
Pepita Christmas Crisps Recipe
Ingredients:
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/3 cup vegetable shortening
- 1 egg
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon lime zest
- 2 teaspoons fresh lime juice
- 1 cup pepitas (pumpkin seeds)
- 1 cup dried cranberries
Directions:
Heat oven to 375 degrees F.
In a large bowl, combine all ingredients except pepitas and mix well. Stir in pepitas and cranberries.
Shape dough into a 2-inch diameter log. Wrap in plastic wrap and chill for 2 to 3 hours or up to one week.
Slice into 1/4-inch slices.
Place 2 inches apart on an ungreased cookie sheet.
Bake 9 to 11 minutes, or until edges are lightly brown.
Cool on sheet for one minute and then move to wire rack to cool.
Makes 3 dozen Pepitas Christmas Crisp Cookies.
