Pineapple Coconut Drops

This recipe I clipped from an old Tampa Tribune newspaper under the "Lost and Found Recipes". It also sounded very much like a cookie I recall my Mom making for our family and my friends when we were young!
I wasn't disappointed and think you'll enjoy these moist and delicious drop cookies.
Pineapple Coconut Drops Cookie Recipe
Ingredients- 1 3/4 cup flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/3 cup butter
- 1/3 cup granulated sugar
- 2/3 cup brown sugar
- 1 egg
- 1 (8 - 9 oz.) can crushed pineapple
- 1/2 teaspoon baking soda
- 1/3 cup chopped nuts
- 1 1/3 cup flaked coconut
Directions:
Mix flour, baking powder and salt together in a small bowl and set aside.
Cream butter and add both sugars then beat until fluffy.
Add egg and beat until combined.
Combine pineapple and baking soda and add to the egg mixture. (Don't worry if it appears curdled.)
Stir in nuts and coconut.
Blend in the flour mixture.
Drop from teaspoons or small cookie scoop onto greased cookie sheets.
Bake at 350F degrees for about 15 minutes, or until lightly browned.
This recipe makes about 5 dozen Pineapple Coconut Drop Cookies.
