Toffee, a sweet confection made by heating sugar - so that it carmelizes - along with butter, is the secret to this recipe.
The most popular chocolate covered toffee bar is most likely either the Heath Bar or the Skor Bar.
It's a candy bar good enough to be enjoyed by itself, but combines perfectly in these brownie cookies.
These cookies are great additions to your holiday dessert table or any time of the year when the mood strikes - and they travel well too!
Toffee Chunk Brownie Cookies Recipe
- 1 cup (2 sticks) butter
- 4 ounces unsweetened chocolate, coarsely chopped
- 1 1/2 cups sugar
- 2 eggs
- 1 tablespoon pure vanilla extract
- 3 cups all-purpose flour
- 1/8 teaspoon salt
- 1 1/2 cups coarsely chopped chocolate-covered toffee bars
- Preheat oven to 350F degrees.
- Melt butter and chocolate in a large saucepan over low heat, stirring until smooth.
- Remove from heat to cool slightly.
- If necessary, transfer melted chocolate to large mixing bowl.
- Stir sugar into chocolate mixture until smooth.
- Beat in egs until well blended.
- Stir in vanilla until smooth.
- Stir in flour and salt just until mixed.
- Fold in chopped toffee pieces.
- Drop heaping tablespoonfuls of dough about 2 inches apart onto ungreased cookie sheets.
- Bake for 12 minutes or until set.
- Let cookies stand on sheets for 5 minutes then transfer to wire racks to cool completely.
- Store cookies in airtight container.
